Looking at all of your snow scenes I see a lot of under exposure. However we don't know what camera or software that you use. If you have any manual control in your camera, or EV compensation you can set this to over expose by one stop, or +1 EV, and this will result in your subjects not being under exposed against the bright white snow.
Then the bright white snow can be toned down in your photo editor using curves, shadows/highlights, levels, or whatever tool you are provided with.
